Carpaccio di Manzo

This is so easy to prepare but don't economise on the quality of the meat as this is the star of the show. Speak to your butcher and tell them what you plan to do with the fillet, then they will know you need the finest and freshest cuts.

Ingredients for about 20 portions

  • 1.5kg fillet steak
  • 1 bunch of basil leaves
  • 100ml of olive oil
  • 200g of parmesan shavings
  • 1kg bag of rocket leaves
  • 4 lemons
  • Salt and pepper


Method:

Trim and clean the fillet of beef of any fat or silver skins. Then mix the salt, pepper and lemon juice in a bowl and rub it onto the meat.

Roll it tightly in aluminium foil and marinate for 24 hours.

Just before serving, slice the meat very thinly and spread over a plate without leaving any gaps.

In a clean bowl, mix basil, a little parmesan, a splash of olive oil and some seasoning.

Serve the rocket leaves in the middle and drizzle the mixture around the side along with the parmesan shavings.

Finish the dish off by placing a wedge of lemon to the side.
