Tiramisu

This is perfect for entertaining as it can be prepared in advance and then just finished in seconds. The only problem you will have with this version is how much to make for allow for everyone wanting seconds!

Ingredients for about 12 portions

  • 800ml whipping cream
  • 180g sugar
  • 400g Mascarpone cheese
  • 2 cups of Espresso
  • 1 shot of Amaretto
  • 1 shot of Marsala wine
  • Cocoa powder
  • Vanilla essence
  • Bake or buy 20cm square plain sponge cake
  • To make, use
  • 4 eggs
  • 225g sugar
  • 225g butter
  • 225g flour


Method:

First, bake the sponge cake and allow it to cool.

Meanwhile, beat the whipping cream with sugar so that it is semi-whipped. Then, add the Mascarpone cheese and a splash of vanilla essence into the mixture. The Amaretto is then mixed together with Espresso coffee and the Marsala wine.

Once the sponge is cool, cut it like a loaf, from top to bottom, in 1cm thick slices, and then soak it with the Amaretto, Espresso and Marsala wine mixture.

Layer the sponge with the cream mixture in a deep dish. Start by placing a slice of the sponge at the bottom, then top with cream, then add another layer of sponge and top that with another layer of cream.

Leave the dish to set before cutting it into about 12 portions.

Just before serving, finish off the Tiramisu with a light dusting of cocoa powder.
